Combining croissants, Baguettes, artisan sourdough and pastries, Calle Bakery is a dream realised by memories shared over many family reunions. This was how Calle Bakery was born. We reminisced over the vast array of baked goods while traversing the streets of Europe in search of the best pastries, an idea was born to remake these sweet and savory bundles of job with a Melbournian twist.
With over 25 years specialising in pastry, we’ve embarked on the Calle journey sharing our artisan recreations ubiquitous across France, Italy, Spain and all Europe.
Calle refers to “street” in Spanish & Venetian. This inspiration came to us while travelling in Europe, as we walked through narrow streets & alleyways to find many of the delicious pastries and breads we aspire to make here in Melbourne. Thinking back brings us so many fond nostalgic memories that we would like to share with our customers.
“It takes time... A lot of time and a lot of patience” Hue, our head chef insists, to make traditional croissants and sourdough from scratch. A lot of love goes into growing the sourdough yeast starter and a lot of patience laminating and proving the croissant dough ready for the right bake. It can take 3 days to make a perfect product.
Melbourne’s love affair with Coffee, Sourdough Bread, Croissants & French pastries can all be enjoyed under the one roof at Calle Bakery as Calle connects people and foodies together.
